Tuna Steaks with Caper and Green Olive Dressing.

circle Serves 4
circle 4 fresh tuna steaks, 2cms thick
circle 3 tablespoons olive oil
circle Sea salt and freshly ground pepper

Green Olive Dressing:
circle 1 small red onion, finely diced
circle ½ cup capers, drained

circle ½ cup stuffed green olives
circle 2 tablespoons lemon juice
circle 2 tablespoons chopped parsley
circle ½ cup olive oil

1. Combine all dressing ingredients and season to taste.

2. Brush tuna steaks with oil and season well.

3. Cook for 3 minutes each side on heated grill plate.

4. Tuna should still be pink in centre and golden on outside. Tuna steaks benefit from being undercooked.

5. Spoon dressing over steaks and serve immediately.
