Thai-Style Barbecued Chicken.

circle Serves 4-6
circle 1kg chicken pieces

circle 4 cloves garlic, chopped
circle 1 fresh red chilli
circle 2 teaspoons salt
circle 2 teaspoons black peppercorns
circle ½ cup lemon juice
circle 1 bunch coriander (including roots), roughly chopped
circle 2 tablespoons olive oil

1. Combine garlic, chilli, salt and peppercorns in a food processor.

2. Make a paste then stir through lemon juice, coriander and oil.

3. Rub mixture over chicken.

4. Cover and refrigerate for 2-3 hours or overnight.

5. Cook on pre-heated hot plate on medium heat, turning frequently until browned and cooked through.
