Sweet Baby Scallops and Summer Salsa.

circle 1kg fresh baby scallops
circle Sea salt and freshly ground black pepper
circle ½ cup light olive oil

Salsa:
circle 1 red capsicum, finely diced
circle 1 yellow capsicum, finely diced
circle ½ bunch flat leaf parsley, chopped
circle 1 small red onion, diced
circle 1 medium sized mango, peeled and diced
circle ¼ cup red wine vinegar
circle ½ cup extra virgin olive oil

 

1. Combine all salsa ingredients in a large bowl and gently stir
through vinegar and extra virgin olive oil.

2. Pour light olive oil over scallops and season generously.

3. Pre-heat barbecue hot plate on high until smoking.

4. Place scallops in a single layer on hot plate.

5. Cook for two minutes then turn once.

6. Cook for a further one minute only and remove from heat.
Do not over cook as scallops will dry out.

7. Serve scallops with salsa.
