Barbecued Kebabs.

circle Serves 4

You will need a kebab rack or 8 long, slightly flattened stainless steel skewers for this recipe.

circle 500g fillet of beef in 3cm cubes
circle (or meat of your choice- chicken, pork or fish)
circle 1 red capsicum, washed, de-seeded and cut into 3cm squares
circle 1 green capsicum, washed, de-seeded and cut into 3cm squares
circle 1 brown onion cut into 3cm squares
circle 16 cherry tomatoes
circle 16 pear tomatoes
circle 16 button mushrooms, stalks trimmed

Marinade:
circle 2/3 cup olive oil
circle 2 teaspoons crushed garlic
circle 2 tablespoons chopped fresh herbs, eg: parsley, chives, oregano
circle Sea salt and freshly ground black pepper

1. Combine marinade ingredients and add beef. Allow to marinate for 30 minutes.

2. Thread marinated meat, bacon and vegetables onto skewers in an attractive fashion, as pictured.

3. Cook on pre-heated grill, turning reasonably frequently to ensure even cooking throughout (about 8 minutes.)
